Tamarind Glazed Lamb Riblets
Lamb ribs
½ cup Salt
2 T fresh ground black pepper
¼ cup Raz el hanout
Foil and plastic wrap
Mix all seasoning together. Generously season the rib racks. Wrap well in plastic wrap then in aluminum foil. Bake in a 300 degree oven for 2 hours. Let cool. Unwrap and cut into individual ribs. Coat with glaze put in a deep baking dish cover with foil and bake in the oven at 350 degrees for ½ hour then remove foil and let brown lightly. Serve with fresh chopped cilantro
Tamarind glaze
2 quarts water
1 block tamarind paste
1 ½ cup brown sugar
1 cinnamon stick
2 star anise
1 tsp toasted cumin seed
½ cup molasses
1 T finely chopped and peeled ginger root
½ tsp chili flakes
¼ cup fresh lemon juice
1 ea clove
Put all ingredients in a thick bottomed pot. Bring to a boil and let simmer for 1 ½ hours. Strain through
